Grown in the high elevations surrounding Siguatepeque in central Honduras, this fully washed lot offers a beautifully balanced cup with sweetness, structure, and everyday drinkability.
Produced by Cooperativa Cafetalera Siguatepeque Limitada (COHORSIL), this coffee represents decades of refinement and attention to detail. Since 2005, COHORSIL has built a reputation for remarkably consistent quality through an impressive network of regional wet mills and a centralized processing facility designed to handle coffee with precision at every stage. Cherries are carefully floated, fermented, washed, density sorted, and dried using a combination of sun drying and energy-efficient guardiola dryers fueled by recycled coffee parchment.
Beyond coffee quality, COHORSIL’s commitment to sustainability and community development stands out. The cooperative operates an organic fertilizer plant using recycled coffee pulp, maintains greenhouse operations producing thousands of vegetable seedlings annually, and supports producers through agricultural supply stores spread throughout western Honduras.
In the cup, expect a smooth, balanced profile with notes of milk chocolate, roasted nuts, brown sugar, and subtle citrus brightness. It’s comforting and versatile — equally enjoyable as a daily drip coffee or pulled as espresso.
