This unique coffee is produced using the honey process, a method that originated in Costa Rica. By leaving some of the coffee cherry’s natural mucilage on the beans during drying, the process imparts a distinctive sweetness and complexity to each cup. Carefully selected farmers deliver perfectly ripe cherries to the San Diego wet mill, where the beans are slowly dried on African beds or patios to enhance their flavor profile.
