Grown on the volcanic slopes of western El Salvador, this coffee comes from the Santa Ana region—widely regarded as one of the country’s finest coffee-producing areas. Fertile soils, high elevation, and a temperate climate create ideal conditions for cultivating exceptional Arabica coffees with balance, clarity, and depth.
Sourced from small producers scattered across the mountainous terrain, this lot features two of El Salvador’s most beloved varieties: Bourbon and Pacas. The result is a cup that’s smooth and well-rounded, offering flavors of cocoa, dried fruit, and toasted nuttiness, supported by a medium acidity and rich, satisfying body.
Growing & Quality
This coffee is classified as Strictly High Grown (SHG), meaning it was cultivated above 1,200 meters in elevation. At these heights, coffee cherries mature more slowly, allowing the beans to develop greater density and more complex flavor. Slower growth, combined with the challenges of high-elevation farming, encourages meticulous harvesting and processing practices—especially important for small-scale producers focused on quality over quantity.
Each lot is hand-sorted and prepared to European Preparation (EP) standards, with fewer than eight defects per 300 grams, ensuring a consistently clean and high-quality cup.
Washed Process
Like most coffees from El Salvador, this lot is washed (wet processed). Ripe cherries are carefully floated and sorted before being depulped and fermented to remove remaining fruit. The beans are then dried to optimal moisture levels.
Washed processing allows the natural characteristics of the region and varietal to shine, producing a cup that clearly reflects its terroir—bright, clean, and beautifully balanced.
